On a diet, why do we sometimes lose more than the "1 pound equals 3500 calories" standard?

Because we may be losing water weight or even muscle mass. 1 pound of muscle equals only 600 calories.
You don’t. You’re being fooled by fluctuations in weight due to water and elimination.
