You do not need carbs exactly, over 9000 years ago when we didn’t eat or process grains the only carbs ate were small amounts of rare to obtain fruits, the main proponent of energy was avaiable from fats. This was a time before food processing and hydro’ed fats, everyone ate healthy.

People who started ‘bloating’ up again was due to calorie and activity levels (dieting with VERY low calories without good levels of activity result in the metabolism slowing down – then when you do start eating more again, wheather it be carbs or not, you will put on fat and water whilst the body finds it’s homeostasis level once again).
